Lasagna with porcini mushrooms and bacon LASAGNA WITH PORCINI MUSHROOMS AND BACON BY CHEF NIKO ZAFEIRAKOPOULOS SERVES 4 -6 people 1 packet of lasagna sheets 50g flour 50g butter + 20g for saut\u00e9ing 20g wine 500g milk 30g dried porcini mushrooms Salt and pepper A little oil A little 500g frozen porcini mushrooms 1-2 cloves of garlic A little parsley 300g pecorino cheese PREPARATION-INSTRUCTIONS-Saut\u00e9ed frozen porcini mushrooms In a hot pan with a little oil and butter, saut\u00e9 the porcini mushrooms until they brown. Just before removing them from the pan, add the finely chopped garlic (optional). Season to taste and add a little parsley. Remove and place on paper towels to remove excess oil. - White sauce with wild dried mushrooms Melt the butter in a saucepan, add the flour and cook until incorporated, then gradually add the lukewarm milk and stir until creamy. Add 50 g of cheese and the mushroom bacon and stir. Taste and add salt and pepper to taste. - Dried mushroom bacon. Soak the dried mushrooms in lukewarm water (about 100 g) or wine for 30+ minutes. Squeeze and cut into small pieces. Saut\u00e9 in oil and a little butter. When they begin to brown, add 20 g of wine and their broth and cook until the liquid has evaporated. Add salt and pepper. Finish with a little butter. Assembly: Pour a little white sauce into a small baking dish (fits about 4 lasagna sheets).
